This morning I made the batter for these lemon sugar cookies. (I will have to post a picture later once I have time to bake them this afternoon!)
They are good. REALLY GOOD.
I do change the recipe to be vegan. I add
1 cup Flesichman's unsalted margarine (one of the only truly dairy-free margarines available) in place of 1 cup of butter. I add 1/4 cup of applesauce + 1/2 tsp of baking powder instead of the egg, so my son with allergies can eat them too. They still taste really great with the substitutions.
To justify eating way too many of these cookies, I will just refer to Andy Brunning's lemon infographic. A science teacher named Andy Brunning in the UK created infographics to feature food chemistry and you can find his infographics here. These infographics are free to use in your classroom and a great addition to an acid/base lesson in chemistry class!
