Monday Made It: Homemade "Sushi" for Lunch!

Food allergies are a challenge in my family.  Finding food my son a) likes and b) can eat is not easy!  So today, we made "sushi" together!  He loves chicken, rice, cucumbers, and SEAWEED!  So he and I rolled mini sushi (with cooked chicken of course) for lunch.  They were a big hit.  I have discovered if I wrap almost anything in seaweed, he will eat it.  He loves it that much.

Real sushi usually doesn't have cooked chicken though.  I did a little research on sushi and I found this cool website from UCLA about the Science of Sushi!  http://scienceandfooducla.wordpress.com/2014/09/16/the-science-of-sushi/

The video called "The Science of Rice" is pretty neat and could be used to talk about starch in a high school biology class.  It shows starch granules from rice under the microscope and discusses what makes sushi rice truly sushi rice as opposed to porridge rice or other rice in asian dishes.  Check it out to see!
